That of mushrooms in Oil is a typical Italian recipe, very tasty and easily combined with many different dishes. If you're lucky enough to have quality mushrooms in your home, you might be tempted to keep them in oil.

But beware: as any good microbiologist may well remind you, in fact, any homemade, packaged food can hide the Botox problem. And for this reason, between preserving mushrooms in oil and freezing, many people prefer the second solution.

However, this does not mean that the recipe of mushrooms in oil is "prohibited". You can also make this food at home, as long as you follow all the steps carefully and ask for the help of an expert if you have any doubts.

What you need

To prepare this simple recipe with mushrooms in oil you need:

  • 1kg of fresh wild mushrooms;
  • 700ml of white vinegar;
  • 500ml of extra virgin olive oil;
  • 4 dried bay leaves;
  • 1/2 teaspoon of black pepper;
  • thyme or cloves, to taste;
  • salt.

Once you have recovered everything you need, arm yourself with a little patience. It takes in fact 40 minutes for preparation and about 50 minutes of cooking, for a total of almost 1 hour and 30 minutes.

Preparation and cooking

Once you have recovered everything you need, let's move on with the preparation of mushrooms. Take solid, quality mushrooms and, if you have difficulty, ask your trusted salesperson for a hand to advise you on which specimens are most useful for your purposes.

Then, clean them thoroughly and cut the end of each stem, if covered with earth. Clean the stem and cap with a damp cloth, and avoid washing them: washed mushrooms can easily lose their smell. If you also have very small mushrooms, leave them whole while cutting the larger mushrooms into slices.

After that, put the vinegar and an equal amount of water in a rather large pot. Add a large handful of salt, bay leaves and black pepper. Bring to a boil and blanch the mushrooms for 4 minutes from the moment the water boils. Quickly remove from boiling water with a ladle of skimmer and place them on a cloth, well separated from each other. Cover them with another cloth and let them dry for 24 hours. Remember to turn them over from time to time!

In the meantime, sterilize the glass jars (such as those where the jam was stored, or specific containers for storage) and let them boil for 20 minutes. Dry them thoroughly and cover them.

Place the mushrooms in the jars and add the thyme and cloves - if you prefer! Then cover the mushrooms with olive oil, close the jars and place them in a deep pan. Fill the pot with water up to 4-5 cm above the jars and bring to a boil, letting the water boil for 30 minutes. Make sure that the water is always above the jars and add more boiling water if necessary.

But remember that the best solution is always to use the sterilizer!

Before serving

When you open the container with i mushrooms in oil, carefully check that its closure and whether or not the mushrooms show mold or color changes, or perhaps if they have unusual odors. If you have any doubts, DO NOT eat them. If, on the other hand, you have acted correctly, you can keep the mushrooms in this way for up to 8 - 9 months.

In this final phase, we can only dwell once again on the Botox risk, and we can only warn you once again of the risk you run in preparing mushrooms in oil without following the most careful and aware steps. In fact, remember that you must never fall into the temptation to prepare mushrooms in oil without further sterilization and that storing them only in oil does not guarantee proper storage!

Among other things, remember that you will have total safety only when the sterilization temperature is brought to at least 120 ° C (boiling does not mean reaching that temperature!) It is therefore better to invest in a special sterilizer that will allow you to control the temperature.
